High in Colorado’s San Luis Valley—7,400 feet where sunburnt days crash into alpine nights—the Cody family has cultivated a stubborn, semi-wild rye since the 1930s. Its low-yield grains dig deep into volcanic soil, soaking up sage-scented air and glacial runoff before we coax them through open-air fermentation and slow distillation. Four patient years in 53-gallon, charred new American oak polish that rugged spirit into a rye that could come from nowhere else on earth.

Aromas: Floral and perfumed, mingling baking-spice warmth with a shimmer of orange oil.

Palate: Black tea and sweet mint glide into salted toffee, orange peel, and stewed fig, then exit on a radiant green-peppercorn spice that lingers like dusk over the valley.

Mash Bill: 100 % heirloom San Luis Valley rye

Aged : Minimum 4 years in 53-gallon charred oak barrels
